Anita made a variation of Jon the Farmer - Urban Farmer's squash and tomato recipe. "For this one, I used two GF pie crusts, flattened them out to make a rectangle, then spread it with some Dijon mustard. I tossed the tomatoes and zucchini with grated garlic, olive oil, salt and pepper, then layered them on top of the crust, put gruyere cheese on the top with some fresh chopped parsley and basil. Baked at 450° for 15 minutes."
