Sick of throwing away wilted herbs? Good news: You don't have to!

​This little bamboo trellis is one of my favorites to observe growing and thriving. Jon has created several of them with varying combinations of plants. This one contains sunflower, squash, romaine, cucumber, bush beans, borage, corn, wheat (transplanted from our son's school project from 2020) and clover. A little experiment that's working out!

Baked Zucchini Sticks w/ Sweet Onion Dip - delish!

​One of the 13 (yah, I said it...thirteen!) items in the CSA share deliveries today, is zucchini and everyone is always looking for something to make (other than delicious bread, that is). Combined with the Walla Walla sweet onion you'll receive.... Gotta give this one a try!
Baked Zucchini Sticks & Sweet Onion Dip
Dip:
1 Tbsp butter
1 med onion, sliced
2 Tbsp apple cider vinegar
2 Tbsp honey
1 Tbsp prepared mustard
1 C mayonnaise
Melt butter over medium heat, add onions – stir occasionally until caramelized. Remove onions and add ACV, honey, mayonnaise & mustard into food processor. Process until smooth.
Zucchini sticks:
Zucchini, unpeeled, cut into 3-inch long sticks
1 Tbsp salt
1 C bread crumbs
½ C parmesan cheese
1 Tbsp Italian herbs
2 large eggs (3 egg whites) lightly beaten
Preheat oven to 425. Combine bread crumbs, parmesan cheese & seasoning. Line baking sheet with parchment paper - spray with olive oil. Dredge sticks in egg, then roll in crumb mixture. Bake 20-minutes, turning halfway through.
